New Look & a Giveaway!!

Sweet Charli got a face-lift!  What do you all think?  Thought I'd center my theme around being simple.  I mean, most of all my projects are really simple.  That's all I have time for anymore, and they are all done on a simple budget too!  Hope you like it!  I love it!  I had Shianne at Designs by Shi do it all for me (since I'm not tech-savvy at all!).  She does a great job!

Cupcake Recipe:

{Chocolate} Chocolate Chip Cupcakes
with Butter cream Frosting!
 Cupcake ingredients:
1 (18.25 oz.) pkg. Devil’s Food Cake mix
1 (3.4 oz.) pkg. instant chocolate pudding
1 cup sour cream
1/2 cup warm water
1/3 cup vegetable oil
4 eggs
l bag mini semi-sweet chocolate chips

1. Preheat oven to 350 degrees.
2. Line cupcake pans with baking cups (or grease)
3. In a large mixing bowl, combine all ingredients except chocolate chips.
4. Mix 2 minutes on medium speed.
5. Increase speed to medium-high; mix 3 minutes.
6. Stir in chocolate chips.
7. Spoon into cupcake pans.
8. Bake at 350 for around 20 minutes or until toothpick inserted comes out clean and cool.

Makes about 24 cupcakes


Buttercream  Frosting:
1 cup (2 sticks) butter, softened
1 teaspoon pure vanilla extract
1 1b. b0X powdered sugar
1-3 teaspoons milk, half and half or cream

1. Using a mixer, cream softened butter and vanilla with a mixer until smooth.
2. Add sugar gradually, allowing butter and sugar to cream together before adding more.
3. If you want it a little creamier, add a teaspoon of milk at a time and beat on high until you get the right texture.

Olivia's 1st Birthday {Pink}

It was just going to be a simple party.  But then I started baking...
 I'm pretty much in my new kitchen 70% of my days!  I love it.  It's my sanctuary {pictures to come later}.
So needless to say, I was in the kitchen all day of her party and came up with some yummy treats!
Sugar cookies, meltaway bites, pretzel and hug bites (my new favorite treat), pink frosting drizzled donut holes, frosting dipped marshmallows, and cupcakes!  Oh yeah, and I had tons of left-over pink frosting so I pulled out a box of 'nilla wafers and put frosting on them too!  LOL!  They were yummy too!
I also made a yummy punch we use in our family a lot.  I will include the recipe later.  It's easy.

 And these.  THESE CUPCAKES!  The best cupcakes EVER!  I will include the recipe at a later time.  They are filled with mini chocolate chips!  I also love baking them without the cupcake wrapper.  So. much. easier!  The frosting is a butter cream recipe.  I will include that later also.
 Olivia's cake was yummy.  And healthy!  Yes.  Her cake was made from left-over whole wheat pancakes from breakfast that morning!  I just stacked them up and put frosting over.  Super-easy!  "piece of cake!"
 This is Olivia and her cousin, Jett.  They are twins from another mother!  They were only born 6 hours apart!  Thanks to family who helped celebrate her birthday.  Did you know that both my hubby and my family all live within a two mile radius from us?  All 4 of his siblings, all three of mine, and both our parents!  Funny huh?

melts in your mouth {not in your hand}

These little cuties have been a favorite in our family for a while now.  They are the perfect cookie to make for parties, showers, Easter, etc.  Aren't they so cute??
Although they've been around in our family for a while, I have to admit, I made them better when I was a newlywed than I do now!  They are kind of temperamental - - but OH-SO-GOOD!  These aren't called 'Meltaways' for nothing, they literally melt in your mouth!  I made them the other day for the first time in a while.  Here is the recipe:

1/2 lb. butter (2 sticks), softened
3/4 C. corn starch
1/3 C. powdered sugar
1 C. flour

Beat butter then add dry ingredients.  The mixture will seem somewhat dry when ready to break off into balls.  Use teaspoon size portions of dough and roll into balls.  Place on un-greased cookie sheet and bake at 350 degrees for 9-12 minutes until barely brown.  Don't over-bake!


I just use a basic cream cheese frosting for these.  Any frosting tastes great!  ...Enjoy

Easy Breakfast Burritos - make and freeze!

 Thanks to my sis-in-law for giving me this recipe.   It has made our lives so much easier in the mornings, especially for my hubby, who leaves too early to eat breakfast with us, so he just usually doesn't eat breakfast at all!  Now, he just grabs a burrito out of the freezer and takes it to work with him.  I made a batch of these last week and froze them.  They are super-yummy.  Here's the recipe:

1 lb. ground sausage
12 eggs
3/4 C. milk
1 C. salsa
1 C. shredded cheese
15 burrito size tortillas
Freezer-safe ziplock (30 gal.)
Seran wrap

Brown the sausage.  In a separate bowl, whisk together milk and eggs then add to sausage and cook until eggs are done.  Next, mix in cheese and salsa until melted all together.
Let the mixture cool a bit and then spoon 1/3 C. of the mixture into each tortilla.  Wrap them up like burritos and then wrap individually in seran wrap
 Once they are all wrapped up, place in freezer-safe ziplock bag and put in freezer!
When you heat these up you will warm them in the microwave for 2 to 2.5 minutes.
*This makes 15 burritos*
